As a certified sommelier and wine educator from sunny Scotland, the most important thing is for the session to deliver what you need. I've been teaching in wine schools, hotel schools and châteaux for several years and too many classes are a set format, repeated so often that the passion is long gone. For me, sessions have to be flexible, interactive and customized. An intensive class on the terroir and wines of Pessac-Léognan probably isn't going to cut it for a bachelorette party, and there's no point in signing up for a generic 2 hour class on "Bordeaux" if you need to practice blind tasting before sommelier/wine exams.
